The easiest option to buy a two seater. There are some guys that have cut vehicles and extended them but its going to be some work. The ones I have seen they actually cut two vehicles one right before the seat and one right after the dash and connect the two longest pieces. You would probably need some metal reinforcement. I know another guy extended one with pvc pipes also. I can't find links to either at the moment.
